Method

  1. Heat the oven to 340°F (170°C) and line a 25 × 35 cm (10 × 14 inch) pan.

  2. Beat the eggs (4) with the granulated sugar (200 g1 cup) until pale. Mix in the sunflower oil (150 ml½ cup + 2 tbsp) and milk (100 ml7 tbsp).

  3. Sift the flour (200 g1⅔ cups), cocoa powder (50 g½ cup + 2 tbsp), baking powder (10 g2½ tsp) and salt together and fold them in. Add the vanilla (1 tsp) and walnuts (100 g).

  4. Pour into the pan and bake 30 to 35 minutes. Don't overbake; the center should stay slightly fudgy.

  5. Cool. Melt the dark chocolate (100 g) with the butter (30 g2 tbsp) and sunflower oil (14 g1 tbsp) and spread it over the top. Let it set, then cut into small squares.

Notes

  • Topping. Walnut halves can go on the glaze instead of chopped walnuts in the batter, or as well.
