Method

  1. Filling. Cook the plums (400 g) with the granulated sugar (60 g5 tbsp) and cinnamon (¼ tsp) over medium heat for 5 to 8 minutes, until soft and juicy. Stir the cornstarch (2.5 g1 tsp) into 1 tbsp water, stir it in and cook 1 minute more, until thick. Cool completely.

  2. Heat the oven to 400°F (200°C) and line a baking sheet with parchment.

  3. Cut each sheet of puff pastry (2 sheets) into 6 squares, about 4 inches (10 cm). Put a heaped tablespoon of filling in the middle of each, brush the edges with egg and fold into triangles. Press the edges with a fork to seal.

  4. Set them on the sheet, brush the tops with egg, cut a small slit in each and sprinkle with coarse sugar.

  5. Bake 18 to 20 minutes, until puffed and deep golden. Cool a little before eating; the filling is very hot.

Notes

  • In the book, plum puffs are named but never described. Small puff pastry turnovers with plum filling are the likeliest reading.
  • Shortcut. Use 200 g thick plum jam or plum preserves in place of the cooked filling.
